While in Japan on the trip of a bento lover’s lifetime, we met Keisuke Kawada of Kappo Kawada and Kawada Bento. His unique style is one we’ve loved since we first saw his bento. We were so lucky to be welcomed into his shop to taste, talk philosophy, and even share ideas about bento. During our visit he asked that we do a collaborative bento so here it is. This, one-time, exclusive offering will feature some of our local products, his philosophies and techniques, and mergers of our styles all in one(well…two) box(es). Taking from Kawada-san’s shiozuke salmon bento, we will sub in our local Bucksnort trout, our handmade shibazuke, local greens, and some of the iwashi bushi(dried sardine flakes) he gifted us to top our signature clay pot koshihikari rice. The second box will be a mix of items from Kawada Bento and some of our own local produce in place of Japanese products. A key feature will be his signature tempura chikuwa(fish cake) stuffed with tartar sauce. Many other small dishes will fill the second box allowing you to try a wide variety of Japanese dishes. Care instructions for Kawada Bento

Keep refrigerated until ready to eat. We recommend not heating this bento for the most authentic experience. Our bento are designed to be eaten at either room temperature or heated. If you choose not to heat your bento, we recommend letting it sit at room temperature for 15-20 minutes before you plan to eat them. Our boxes are oven safe to 356 degrees for up to 30 minutes. We recommend removing any wrapping and divider cups of side dishes or sauces and placing them in the oven and heating at 350 degrees for 10-15 minutes or until thoroughly heated throughout. Our boxes and utensils are also compostable and all other materials are recyclable, so please help us minimize impact by composting and/or recycling if possible.
