As we wave goodbye to the heat of summer and welcome the cooler Autumn temperatures we take a moment to reflect on transition. This menu will highlight some of the preserved summer ingredients as well as their just arriving replacements. Ume Madai, a special sea bream intentionally fed on Japanese plums, takes on the flavor of the season through its curated diet and lends its aroma to a delicate, warming, dashi enhanced by herbaceous shiso and sour plums. Hanasaki Gani, a rare, king crab relative, will be complimented by an array of refreshing green herbs and vegetables to showcase our freshly sprouted landscape. Wild vegetables, preserved from the summer, alongside recently emerged wild mushrooms takes us on a refreshing stroll through our native forests reminding us of the bounty of nature. Sanma, a highly seasonal, treasure from the seas of Japan will top our signature claypot rice which is tinted green by a peppery Watercress pesto. Pawpaw a legendary, native, tropically flavored fruit will round out the menu standing on its own for you to enjoy in its perfect, wild state. The evening will culminate with a tea made from dried wildflowers harvested throughout the summer as we say our final goodbyes. This 10-course menu is priced at $250/person +tax. Optional beverage pairings are available for $80/guest +tax as well as by-the-glass options you can choose from while you dine. We look forward to welcoming you to SourceWater.

Bar seating is limited to 6. Up to 4 guests can be seated at standard height or hightop tables.
